On a quest to find another pizza that is gluten-free and edible, I tried the Conte’s Margherita Pizza with Roasted Garlic and Olive Oil. I added some of my own ham and extra toppings, but this pizza wasn’t a whole lot different than the other Pizza Amore I tried back in October. Again the crust tastes more like a cracker. It doesn’t crisp and break the way a regular pizza dough does. The cheese was a better quality at least and there was more sauce so that was good. Hmmmm. Next time I’ll try Glutino brand and see if I can’t find something that will make this little pie face happy.
Anyone have a good pizza pie crust recipe to follow? Maybe frozen just isn’t the way to go.

As food package labeling changes with our times, I found the organization that certifies gluten-free foods and how they’re being added to labels now. The Gluten-Free Certification Organization, GFCO, is a non-profit that has generally the following criteria for being certified. See more on their website.
* Periodic gluten testing in the manufacturing facility using GFCO-approved testing methods, to meet the minimum GFCO standard of less than 10 ppm gluten in a finished product. A discount buying program is available to GFCO companies.
* Periodic plant inspections by a GFCO contracted auditor.
* Random product testing from end-user shelf by GFCO
* Contract is renewed annually unless specified by either party.
Having shown this, it does not mean that other products that don’t show the certification aren’t gluten-free. It seems this organization started out of the Gluten Intolerance Group which then created this certification program back in 2005. It is still new and it’s an organization like any testing company where the businesses need to pay an annual fee to continue the certification. Therefore small businesses may not be apt to doing this right away. Either way good to know it exists and their website has a list of all their certified products.
PS. Their logo really bothers me, it’s so generic and the words are just plopped there. The website is quite bland looking as well. I hope they eventually change it to something a little more interesting so someone who is a celiac or gluten intolerant will look at it proudly.

Something interesting today, my inner arms don’t have any open lesions or even any scales or dryness! My neck is also much less scaly and dry. There is still some on my chin and itching is still prevalent around there and my shoulders. The past week I have seen a drastic improvement in my skin and I think these are the factors that are sustaining this.
Raw greens – Remember I’ve been eating tons of salads lately. I find I’m feeling less itchy when eating raw veggies. Even better than when I eat a whole plate of cooked ones. Lakewood Acai Amazon Berry Juice – I really have been drinking about 6oz of this every morning and I truly think this high antioxidant mix is helping me to fight off other bad things Herbal Tea – The Chinese Herbal Tea has become a normal routine now and I have 2 cups of it a day, I think it is naturally aiding in the itch and redness. Less grains – The days I have less of rice and corn I seem to feel even better. Cleansing my face with Shu Uemura Balancing Cleansing Oil - it’s oil based and I use very little water. It’s working really well at the moment but I am apt to see other cleansing oils that use main ingredients other than mineral oil. The mineral oil being bad could be just one of those myths with cheap unfiltered crap. Shu Uemura has a process and seems to be a good formula from the macro level. Oh and they a bunch of different formulas depending on your skin type. It seems to be working quite well right now, but I keep reading about DHC so a product review might be in order.___________________________________________________________
Assumptions: A few of the things that go along with this is that I’m also not having any gluten. Since the week before starting the greens and acai craze there was not a lot of change, I’m uncertain as to whether after the 90 days I went back to a little gluten but maintained the above 5 items that the same results would be occurring. I’m not sure.

Possible Food Allergies/Intolerances: I have come also to see another pattern while my skin is visibly much better. I can tell when something is triggering it more directly. I am starting to believe I may be allergic or more intolerant to the following greens. Yes, GREENS!
Parsley Cilantro BasilI do love the cilantro and basil in a hot bowl of pho but I am going to do my best and really try eliminating those and then having them one by one once my skin is at a point that I can sustain a test like that. Allergy tests will not be able to tell me these things since there really is not a known allergen within these spice type greens. It could likely be more an intolerance than severe allergy.
Overall I’m going to continue this trend and keep you updated. Either way something is working!
I made my way to a great little take-out Dim Sum place in Richmond area of San Francisco called, Good Luck Dim Sum. The problem is, I can’t really eat Dim Sum while being gluten-free. If you don’t know what Dim Sum is, they are like Chinese tapas, little bites, that include lots of bakery goods, dumplings and sides that you normally go to a restaurant and get from little carts that come around. Most of the little bites have a flour type dumpling wrapper and soy sauce as an ingredient. My friend can get all they wanted since they’re not gluten-free. Check out the pic of the box of goods they could eat. No steamed barbecue pork buns, no shu mai, no har gow, no nothing for me. I was giddy looking at it, but then sad that I couldn’t have any. So instead I ended up heating up my own items. Rice noodles, fried taro cake and duck egg and pork congee. This was a lot of rice product for me, but needless to say good. Not quite the same experience and I was soo tempted to break my vow. I used the Braggs Liquid Aminos and still enjoyed my food.

Gluten-free Snickers and Reese's Peanut Butter Cups
Halloween, it’s come, it’s gone and I still got my candy. The two big bags I have are Snickers and Reese’s Peanut Butter Cups. After some internet searching it’s confirmed that both are gluten-free. Hooray! Of course these are not in anyway healthy and the amount of sugar puts me in a frenzy. My next bag will be 3 Musketeers which is gluten-free also. No Kit Kats, or 100 Grand for me though. Happy Halloween to all.
